HEALTHY GREEK BEAN SALAD

This easy Greek Salad is made with plum tomatoes, cucumbers, red onion, bell pepper, kalamata olives, and crumbled feta cheese. Tossed with a lemon and red wine vinegar vinaigrette dressing, it’s ready for a summer picnic!

Ingredients

1 serving

  • 2 tsp red wine vinegar
  • 1 tsp olive oil
  • 14 tsp dried oregano
  • salt & pepper, to taste
  • 2 oz cherry tomatoes halved
  • 12 green bell pepper deseeded & diced
  • 1 Lebanese cucumber diced
  • 14 red onion finely diced
  • 12 can of cannellini beans (14 oz) drained & rinsed
  • 12 oz kalamata olives deseeded & roughly chopped
  • 1 oz feta crumbled
  • 2 sprigs of parsley roughly chopped


Preparation

  1. Whisk vinegar, olive oil, oregano, salt and pepper in a large bowl to combine.
  2. Add tomatoes, green bell pepper, cucumber, onion and beans and mix well. Adjust seasoning.
  3. Transfer to a serving bowl and top with olives, feta and parsley to serve.
